Hi – I’m Evelyn Day – a Brighton-based chocolate artist. I’ve been passionate about chocolate all my life and I’ve found a way to translate that passion into (incr)edible art!

Inspired by my love of travel and architecture I make unique and extreme chocolate sculptures for memorable events bringing joy to chocolate lovers around the world.

In 2019 I featured on a number of episodes of Channel 4’s Extreme Chocolate Makers. It’s a lighthearted behind-the-scenes TV series showcasing extreme chocolate makers in the United Kingdom.

Chocadyllic at the Royal Pavilion!

Lovingly handmade miniature Royal Pavilion lollipops in milk, dark and white chocolate available to buy from the Royal Pavilion shop in Brighton.

Each chocolate weighs 40g and is a beautiful indulgent treat eaten right off the stick or stirred into any hot drink of your choice!

Chocadyllic News!

I’m excited to let you know that Chocadyllic is now in partnership with VisitBrighton – you can see the fabulous listing here.

The Chocadyllic story and more was featured in a recent blog by YBrighton – click here for a comforting read over a lovely cuppa with your favourite chocolate.

It was a lovely surprise to find Chocadyllic listed as a favourite local business on Brighton On The Inside. Easter may be over but I’m still creating chocolate treats for order by collection, delivery or post.

Supporting the NHS

I created dozens of bags filled with 70g of a mix of milk, dark and white chocolate, all wrapped in biodegradable cellophane for our Royal Sussex County Hospital staff. A little bit of chocolate joy to say a massive thank you to our NHS.

I received a lovely comment on the Chocadyllic FaceBook page “Thanks Chocadyllic, we’re enjoying the chocs on our break in A&E v much appreciated by the staff here 👍👍😘”.  So glad they’re enjoying them.

CoronaVirus and Chocolate

One of the things I love most about what Chocadyllic is the joy that my chocolate creations bring.

The world has become a strange and challenging place. The lockdown, social distancing and isolation are having a big impact on our everyday lives. I want to reach out to you as a friend to send you love and thoughts of hope and well-being.

Fortunately and by practising excellent food safety standards Chocadyllic can still operate. I am now developing some products for you to be able to order and send everywhere. The chocolates will be wrapped in biodegradable packaging, boxed securely for postage, and made slim enough to be posted through letterboxes.

So whilst we are limited by forces beyond our control you’ll soon be able to send some joy to your precious family and friends.

Frequently Asked Questions

I’m often asked a number of questions about my chocolate creations, which I thought could be useful. If you can’t see the answer to a question you may have, please don’t hesitate to contact me and I’ll get back to you as soon as I can.

Do you deliver your chocolate sculptures?

Yes absolutely. Delivery within Brighton & Hove is free, further afield is charged at £15 per hour plus travel costs such as petrol.

How much do you charge for your chocolate work?

I like to work with my clients’ budgets so do get in touch and we can plan your very own special chocolate showpiece to fit your requirements.

How long do your sculptures take to make?

My bespoke chocolate showpieces generally take anything from two to 14 days depending on its complexity and size. I can often work to a clients’ budgets by tailoring the design, scale and complexity.

How long do your chocolate sculptures last?

The Belgian couverture chocolate I use has long best before dates – up to 18 months for dark chocolate. If you’re commissioning a sculpture to keep it will last indefinitely kept in the right conditions – away from sunlight and other heat sources. Beautiful clear acrylic covers can be made to measure for keep and display purposes.

Do you make Cakes?

Yes, I do make cakes. And amazingly tasty ones too! My signature chocolate cake is legendary and always goes down well at celebrations and events.

I usually make the cakes separately from the showpiece in order to make the cake easier to transport, cut and serve whilst ensuring that the showpiece’s design isn’t compromised by having to base it around a cake.

However, on request, I can also design your sculpture to incorporate a cake into the stand that the showpiece sits on.

Clients may also provide their own cake if they prefer, so long as it doesn’t have to form part of the showpiece.


I use the best quality Belgian couverture chocolate to create my products and sculptures. Here is the list of ingredients for you, just in case you want to know. Yes, dark chocolate is vegan and dairy-free.

Dark chocolate contains: cocoa solids 52.9 % minimum, sugar 46.0%; cocoa mass 42.5%; cocoa butter 10.5%; emulsifier: soya lecithin <1%; natural vanilla flavouring <1%

Milk chocolate contains: cocoa solids 35.9 % minimum, milk solids 20.2% minimum, Sugar 40.5%; cocoa butter 24.5%; whole milk powder 19.5%; cocoa mass 10.0%; whey powder (milk) 5.0%; emulsifier: soya lecithin <1%; natural vanilla flavouring <1%

White chocolate contains: cocoa solids 30.8 % minimum, sugar 48.0%; cocoa butter 30.5%; whole milk powder 15.5%; skimmed milk powder 5.0%; emulsifier: soya lecithin <1%; natural vanilla flavouring <1%

May contain traces of milk, eggs, nuts, peanuts. Store in a cool, dry place.

I use biodegradable packaging. It’s important to save our planet and not just because it is the only one with chocolate.
